Pumpkin Crunch
Pumpkin Crunch > Pumpkin Pie, I said it 🫢🎃✨
30 oz canned pumpkin puree (not canned pumpkin pie filing)
8 oz milk of choice
3 eggs
1 teaspoon cinnamon
1 cup coconut sugar
1 box vanilla cake mix
6 oz walnuts, chopped
1 cup butter, melted
-In a large bowl, mix pumpkin, milk, eggs, cinnamon, and coconut sugar.
-Pour into a greased 9x13 inch pan. Sprinkle cake mix evenly over pumpkin layer. Sprinkle walnuts on top of that and pour the melted butter over evenly.
-Bake at 350F for 1 hour.
-Cool completely.
-Run a knife around the edges, place a platter over top, and then flip. Cut into bars and serve as is or with whipped cream or ice cream!
