Saucy Spaghetti Squash Bowls

The saucy spaghetti squash bowls are nutrient-dense, fun to eat, and easy to put together! Sautéed mushrooms and toasted walnuts top it off with deep umami flavor.

Spaghetti squash
Mushrooms of choice
Sauce of choice
Walnuts
Parsley

Halve spaghetti squash, remove center with seeds, and roast cut side down at 425F for 30 minutes.

Sauté mushrooms until golden. Toast and then chop walnuts.

Remove squash and scrape until free from sides, yet with enough remaining to maintain bowl shape. Mix with sauce of choice. Form well and add mushrooms, topped with walnuts and chopped parsley. Enjoy directly from squash bowl.
